As i suggested in post two. Also you show the temp sensor circled in your photo,You mentioned the sesing wire was a bit dodgy too. Reckon that's potentially where the issue is. Fans do not always come on if the sensor or the wire are giving fault issues.However the CEL will probably stay on.
As suggested,change the sensor and see,they not too expensive.

If the clutch pedal travels too far beyond release this can also allow the release bearing to be pulled out of the pressure plate retainer ring, even on a new clutch.
In my experience it is best to limit pedal travel to only just allow release to engage reverse without crunch..Remove the rubber stop behind the pedal arm (if its still there) and fit a 10mm bolt with two nuts then adjust this "new "stop to restrict pedal travel..works well ;D
Easier than adjusting the stroke of the master cylinder too
